 Safety first. Fire, explosions, burns. Firings often come from the kitchen: oil which takes fire, dropping on the gas ot spontaneously (too high temperature) ; explosions occur with the gas, but also in the microwaves (sealed dishes, eggs etc). Burns come from very hot dishes, ejection of oil, boiling water, grease; taps hot water  ; from the electric cooker (see below). Children are particularly affected (cookers, pots overturned, hot water taps). Cuts are frequent with knives, including electrical ones, choppers, opening cans (cutting lids) etc.   See also electric dangers
- Burning electric plates . > Cooking electric plates are very dangerous once the pans removed, for they may heavily burn those who don't pay attention at. Particularly young children !  The risk remains long after their extinction. Avoiding the risk of a physical disastrous handicap is very simple. We put always a large pot full of water on each used plate. The residual heating power can still heat the water, which will absorb the heat within minutes. Hot water can be used for dishes. Think of your children ! Do not let tails of pans point outward, turn them inwards !

Microwave oven. Electromagnetic waves of very high frequency of the oven (like mobile phone, i.e.nearly 2,5 gigahertz) only heat the water contained in food and the temperature rises throughout the mass, from the interior, so Danger is the vapor bubbles can not form, neither get out normallythat things can explode. The phenomenon is known for eggs..

Microwave oven Quality. Can be different from a traditional one. For xemple, a cup of milk is not so good as heated on the gas or électric cooker.

Heavy pot/ pan. The pots and pans should be thick and consequently heavy, in order to better balance the temperature and make it more homogenous everywhere. Of course, it is also a question of price, but beyond this constraint, speaking trend. A thin pot placed on the fire can not absorb the heat and the temperature rises too much. The bottom curl and edges burn much more than a thick pot. This can be seen easily by wetting the edges of the two models, when rather hot, the thinner evaporates immediately the water with a characteristic sound, and not the other, which "burns" much less. It is a question of mass (see Physics) and the food will be sensitive in these respects. The Teflon coating also much more roughed up by burnings than cleaning products. Because nothing attack the teflon, excepted abrasives.
During a cooking exhibition, a Cook began to fry the vegetables in a Teflon pan and then, ready to sear the meat, then use a very conventional uncoated pan, the temperature he explained, would be too high for Teflon.

Pan Temperature. If you pour a small quantity of water into a hot pan, two cases occur: if the pan is medium hot, water "dry" (it's funny), and gradually evaporates. If the temperature of the stove is high enough, water forms small balls that roll and jump before disappearing gradually. It is a way for a chef to know the temperature of the pan, which reaches now at least 180 °, the right temperature required to fry over the meat.

- Trendy  food cooking . Traditional cooking would be too brutal for our tasting quality and perhaps also for our physiological benefit. The trend is to cook at a lower temperature, adding of course the necessary time to reach the right cooking. Meat is mainly in mind for this new cooking, French or World, I do not know. Does the origin come from ancient tribes?  "Pacific Islanders" practiced an oven with hot stones buried with the meal. And it took time. An exception therefore for the McDonald's hamburger that must reach a temperature of "certification" given the danger of a certain Listeria killer kind.

 

- Toast : if the bread is too much dry, moisten it lightly slightly by tapping the section with your wet hand (passed under the tap): it will be more softer after having passed to the toaster (to be consumed however without delay). Also think at safety: sometimes the bread burns at the point causing fires !

- Toaster a small pair of wooden tongs (for olive/gherkin) will allow you to seize some wedged bread burning into your electric toaster. How to make it ? Making it : two 25 cm (10 inch) pieces of of light wood (pine tree, balsa.. see modelism shops). Make a notch at both ends, wedge them and bond on these wedges. The thinned part are enlarged.


Others Clamp for plates. Pliers of cast aluminum is a broches.  trois à électriques Prise - balayette, pelle trier, adhésif, ruban immobiliser, agriper, courant, (Prises > French object of our glorious culinary past, that we no longer find so easily and that we keep with love, instead of modern sophistication. Brilliant in its simplicity, it is distinguished by its strong perrot hooked beak ending by a flattened  T  ; it offers major opportunities : to take a lid or a hot dish, cracking nuts or pop up a champagne cork. To grasp a hot dish by its edge, lift the dish with the pliers, put a thick pad of fabric under it, so that you can help with your other hand this to secure the grasp and to relieve your wrist.
As a matter of fact, Otherwise,  she ressembles a few to a well known multi-service wrench but without the T beak, preferably by protecting its jaws and stick with plastic supple tube, a duct tape, or a tape "grip" that will be wrapped around the handle of tennis racket, or end of a rubber band kind of bicycle inner tube cut (also used to grip).

- Easier recapping along with letting possibly air passing. If the cap inflates too much, it can become difficult to replace it inside the neck. And the temptation to reverse it upside down it is great. One usually try to cut the cork around to reduce its diameter, which is rarely successful because grains drop (it is even more difficult with some plastic corks). Here is what I practice (since 2007 feasts) : I simply cut the cap bevel, with a cutter or a very sharp knife. Pushing it just a little, the air can move to let the wine air while avoiding from the dust falling inside. By pushing down much stronger, one can completely clog the neck.

- Keeping fresh a bottle. You can use a cooling brick, this clay cylinder which is immersed in water before placing the bottle in it. It is the evaporation of water that will produce the cold. However, the brick is drying quickly and loses its effect. So put some water in it, several inches, and by diffusion, it will produce the cold longer, placed in direct sunlight. Especially in the lower part, but it's better than nothing. If necessary, return the bottle to mix its contents, the cold liquid, heavier, remaining at the bottom. We produced and fresh water in Algeria, the sun, surrounding a cylinder of tissue that was constantly watered. The more evaporation is, the greater is cold.
Another solution is to use the refreshing sleeves for bottle of wine or beer, to be put in the fridge before or kept permanently inside.

 

Melting butter. brique In the Summer (balcony, terrace, garden). Use these refreshing sleeves for bottle of wine or beer ; need to cut one in half. Put the butter box on a half-part thus obtained, white side (non-reflective). Possibly using a large model without cutting it if the butter box can enter inside ! >- Products drying Defrosting something>big is longer. Drying and warming / cooling go together. The concept of mass is important, meals, pies, fruit paste, cheeses ; the more they are cut into strips or small pieces, the more they are quickly drying. To better conserve them, including inside the refrigerator (worse at -20° celcius), keep the greatest possible compactness with thick chunks. Protect from surounding air.

 - To thaw without microwave, place the food on a large thick metal plate while keeping a good contact with (without air space). For example, in a heavy bottomed pan, it will evacuate the calories faster (Role of radiator fins). The stainless steel sink is suitable (thin, but wide area). The thaw of a congelated meal > must be quick, due to bacteria that develop during this time.

- Freezer, ice formation and oxidation. in the fight against ice formation, but also against the blackening of the start of sorbets and ice to taste, I use plastic wrap kitchen I cons plate portion, inside the box is half empty. The result is very significant. Details and solution for the ice tray, see below, "household appliances, freezer.

- Spreading out the paste once the paste of your cake or pizza pie kneaded into a ball, before passing it under the roll, put a fine layer of cornstarch on your working board ; you can now roll, that will slip better (used by professionals)

- Cut into six. To cut the pizza / pie into six pieces. Measuring approximately the radius of the pizza/ pie with a knife or other utensil or divide the diameter of the dish by two. Report this measure on the circle (along the edge), in a straight line and mark with a knife. Reporter again and so on. It's like if you took a compass and that you make it "walk" from one leg to the other around the circumference. The straight line cuts the circumference is called "rope" (here the length of the radius) and the corresponding part of the circumference is an arc (circle). Like a bow (arrows) bandaged by his rope (radius).
Idea not to break the bread with the knife, previously made a vertical slit in the crust with scissors. I saw cutting the pieces with scissors !

- Cut into five. One can make calculations, but this is funny: Prepare a large strip of paper (10 to 20 cm) long by about 60 to 80 cm. Tie a knot, flat-arranging properly the angles. If we cut what exceeds the node draws a pentagon, useful also for the five-pointed star of Christmas.

- The skewers Small skewers can be made of wood or bamboo  ; they tend to burst vegetables they are picked on (fragile mushrooms, tomatoes..); to facilitate the penetration of the skewer, cut the point of the skewer so that it becomes flat on two opposite faces, like the tip of a crewdriver, more thin; get it then spinning between the fingers while pushing it into the vegetable and it will act as a drill (you must get a round hole).

- Mayonnaise. if the mayonnaise does not harden, one can test the scientific method, conclusions of a recent study (2003)  : the emulsion would be better done when oil is thicker : one thus recommends to place oil at the refrigerator. The first test appeared conclusive, mayonnaise being thick but it was completely flattened afterwards ! it was perhaps too cold ? We have to make it again but you can test it. Electric whisk or fork, nothing is better when the day is not favourable. Professionals (and some individuals) never miss it. If you have a reliant method, let me know it, thank you.
Here what Pierre Dormoy, reader of hibis, says “the success of this emulsion is due rather to the optimization of several criteria. Temperature, rather fresh, One can "save" a mayonnaise while putting inside a dice of ice, stiring firmly again and removing the dice.  The dish shape is surely important : a large one like a soup plate or a plastic Tuperware receptacle was well better than a tight and deep one like a grinding stone bowl. As long as enough oil is not put, the mixture remains viscous but liquid. For an egg yolk, hardening is obtained only after one ten centilitres of oil, the optimum being around 20 centilitres. For a small quantity of sauce, it is thus necessary to take only one half egg yolk”.



Cleaning, washing, drying
Cleaning bottles and carafes with a long neck). bent an iron wire from an umbrella with a cloth turned around it. Better is to hancraft a pouch of thick fabric that slides over. More simple : a plastic hanger of iron, rigid enough. Cut the hanger on each side of the hook, fold and crush the end that must pass through the narrow necks or cut/ saw it if you can not. A small ball or something else can be stuck to the tip. Fold like the gooseneck so that the stem can best reach all parts of the carafe or bottle. Handcraft a pouch sewn with strips of heavy cotton (10 to 20 cm or more), put several layers if necessary. (see Brico 3 photos)

- Square for wiping the worktop.  Usual rags are generally rather fine and shapeless (blank side). One could add color without exaggerating. Who would take the time to carefully fold them between each wipe ? Here is something more glamourous, colorful and well decorated, a piece of bath towels, cut is stung on several thicknesses to stiffen it and provide a good absorption hability. We can make a collection with used towels that we do not dare discard off.

Regular sized kitchen rags. Here is a very clever mean to hide them : a friend of us was designing its top cupboard near the sink, so there is a gap remained between the cabinet and the wall. His cloths are stored and she pull down them because they are hooked to a sliding system with a spring. It is quite useful - and unique.

Before washing very filthy dishes, pots and pans, first wipe well them with a kitchen paper.

Dishwashing (products). Tests products for dish washing by hand are made with pure product, any dilution resulting in a loss of efficiency, except of course for what was diluted with water (sugars..). So I stack the dishes in the sink and pour the pure product on the first one (a few drops), or the knives hand-held above.. I add very very little water (which falls partly in the disht below) and I rub with a brush. Then I pour the same product in the following dish ; and so on, transferring the product in each other, which becomes a sort of thick sauce, but still active. Can add some product if there are lot of dishes, glass and so on. I rinse very well with hot water, yet rubbing (never listen from advertising). Dry immediately after draining to prevent traces; the work table is free for another work. We work with a more active product we use in a small quantity : economy, ecology. And we are not working hands immersed in an greasy and filthy juice (as if you have fill up the sink with water before !).
Detergents for washing machines: reduce the amount, especially for the dishwasher (laundry washing machine to try). I have followers.

- Drying the dishes, bottles, tea towels. Preferably wipe quickly everything once welldrained; it is more hygienic, leaves no trace and free the sink surface. Microbes are very fond of water and limestone too !
Becauseof liquids surface tension, it is better to put the glasses upside down onto a fabric or a paper that will evaporate the water by capillary action. Otherwise, a rope of water remains around the edges, drying slowly despite the grooves of the sink. Tilt the dish so that any horizontal surface is left : the drop hanging at the bottom of the glass won't nerver fall ; it is goind to dery slowly, depositing lime. Very effective, put on the side, horizontally, bottles, pans, coffee pot glass. The water fall on the lower curb; easy to be poured.

- Drying off a wine decanter. Vertical supports exist  for that, but if you want to make simplier or help you out, keep a  plastic bottle of water ot milk and cut it out. Return the carafe or bottle to be dryed and place it in it. You can also use a funnel turned upside down, the air tube, take what you think is more stable. Remove and return them once they complete drained to dry or wipe with a cloth.

- Drying is not effective in a hollow spot like the bottom of a sink. We must find the normal level or even higher. A rag or towel (kitchen, bathroom ..) will dry faster in height, if possible away from the wall. In a bathroom, they can be placed on the rod or the glass of the shower.

Cleaning a coffee machine.We use acid for the lime, may be too much but wherever water lays, in the tank, hoses etc, a kind of viscous glue is probably other soils that are not cleaned by the acid (it attacks the limestone, not the rest). What is accessible can be cleaned by rubbing : the water tank and pipes or to take water + filter, where never pass boiling water.

What can be done, but read the information before.
Remove the dose receptacle of coffee, and put underneth a small pot. Put water in the machine tank and run a quantity of water equivalent to at least ten coffee doses. Take the pot and pour its hot water in the machine tank. then start again several cycles like that : water will become more and more hot, cleaning / sanitizing with vapor the entire circuit. There will be steam: the better, it's no risk since no coffee, no pressure !

- Dust shovel brush holder. Replace the plastic handle of the shovel by a piece of garden stack - canes for example -  rather long to mork more easily, and screw on a small hook on it (round or square); the shovel is hooked thus on the handle and the handle hooked on the wall. More practical, but also more big, is a shovel with a long vertical rod that avoid to bend ourselve.

- Under the sink. Flap for knives and kitchen ware compartment and arrangements under the sink to be asked "manufacture").


Annoyances , advices and tips.

Summary : Anti-milk overflow - cut a finger - Burned Pan -  Removing water, milk, wine, oil spilled - Odors of fish   Sticky or punctured tubes dispensers -  Keeping tubes folded back. Open cans jars, pots, tubes.. (covers caps and stoppers - screwed, precut with ring, under vacuum, depressed..)

Cut a finger ? These accidents occur frequently in the kitchen, where the shrinkable film is ; take it and wrap it around your finger or your hand, waiting for the plaster ; adhesive tape can be useful too, for a small cut.

- Anti-milk overflow. No system can prevent milk from overflowing because of the inertia. Then, there is only one solution, which was never exploited, to let it overflow : yes but not anyhow to ask ; light "handicraft")

- Burned pot/handle; this receipt of bleaching is known, but perhaps not for all people : milk, sauces, meats and vegetables or worse plastic paste "paste to modelling" (quoted in this document) turned out in maroonish molasses after having forgotten the pan on the fire, all that residue can be easily removed by making boil a little bleach inside the pan, added with some water or almost pure. I rejigged so an enamelled pan (white inside) which I couldn't get back cleaned. Sometimes, the handle is also burned : see repair.

- Spilled liquids (water, oil, wine). use a kitchen shovel, a small brush and a basin: collect most of a liquid reversed with a shovel, by constantly gathering the puddle pool with the small brush; it is much faster than to sponge and it prevent the liquid from spreading out more. Finish with the floorcloth or sponge. On the work board or the table, a kitchen bent metal spatula will also make the deal (move it flat on surface to be cleaned, or push the liquid on the spatula with another spatula, knife, palm of your hand...).

Odors of fish. They are particularly unpleasant and strong, especially for herring, salmon and sardines ; here is a result quasi miraculous (Marie Claire Ideas) and tested by hibis, Madam. Tested to date : salmon and herring. Put one or two pods of star anise (Badoine) in water maintained hot at quivering fifteen minutes before cooking and during cooking. It is absolutely incredible, because there are practically no odor, ventilation stopped, nor added by the badoine, whereas one had some for half day and more. To come : roasted sardines.

Sticky or punctured tubes dispensers.  Punctured near the base (glue dispensers..) : wrap around a shrinkable kitchen film or a large adhesive tape.

Keeping tubes folded back. To maintain a plastic tube folded back(glue, moisturer, sun tan), use a clip or wrap a tape around the rolled part.

- Hard water, drink water ("the French Paper", 08 2010) : hard water leaves limescales deposits on everything from the inside of kettle to sanitaryware. In high calcium regions, an anti tartre device is considered as essential. It does not remove the calcium deposits but effectively ensure that the particles won't stick to the surface of pipework and appliances. The device is a good compromise ? You may also want to consider water softener equipment that can provide total protection and optimum water quality, supposed it is perfectly set and don't remove totally the calcium. Because soft water means acid water, not really good either for all what you are supposed protecting. It could be worse and need to be paid attention. And it is not good for health at all because hard water is the best water to drink ; consequently, you must bypass the softener so that normal water can run from the kitchen tap.


Open cans jars, pots, tubesn bottles.. (covers caps and stoppers - screwed, precut with ring, under vacuum, depressed..)

Screwed lids glass jar  use garden gloves with coated with a non skid matter. Or cut out two pieces of non-skid mat, the first one for the lid, the second to be placed under the pot.
Put the lid under hot water tap. If not success, use the big mean : put the pot upside down, insert a screwdriver between the cover and the glass, making gently  a crack between the edge and the lid ; proceed by places all around the lid. So you are not messing anything. Put the pot upright and unscrew the lid, that would go.
There are also of course special clips, ribbons of steel to unscrew etc. (kitchen accessories).

The "One Touch", is a German gear with battery very effective that open pot lids : to be searched on the Internet or in small kitchen catalogues. it is perfect if you are not too much strong or are in pain. It is very powerful, it's incrédible.

- Pre-cut cans with tear off ring. Sometimes, the ring can breaks and becomes unusable, or we are injured while pulling it. There are commercial many utensils to take on these tabs. My solution is very simple ! it consist to use a regular kitchen sharp knife (eg, peeling) or similar: Place the blade vertically, the tip of the knife on the cutting groove, gently hammer on the handle, it sinks. Then lower the knife touching the edge of the box, what makes lever and lifts the lid a crack. Only now slide the blade along the groove - it's easy - still holding the knife tilted toward the edge of the box (near horizontal). - Small stuck metal caps, capsules small bottle or solvent like varnish nail , epoxy, cellulosic adhesive dispensers... - 1 put under ebullient water.   - 2/ Wrap around several rounds of fabric - or no slip - in the opposite direction of unscrewing to increase the diameter ; the grasp will be better and more comfortable for delicate hands. 3/ Use a clamp with a hollow round section or a nutcracker with two hands (as a pliers !)  I tried and succeed (Perrier and beer caps) it works ! possibly place a coated fabric to improve the grip. - Safety Stoppers. These stoppers cannot be opened by the children because one cannot open them ourselves; if get upset with these stoppers, like thinners, acetone, trichloroethylene and other thinner-grease-removers, make like me. These stoppers consist of two caps encased one into the other; notches make it possible (in theory) to solidarize them while unscrewing when one press strongly above. Simply cut the external stopper with a cutter or the saw (without damaging the other, below) and discard it. Remove the plastic teeth which remains because they would hurt you. Safety remains a little because the new stopper offers less catch to the fingers of the child. If it is a little hard for you, Ladies, take a rag. You can try other processes like infiltrating adhesive between the two stoppers, but that does not generally work.

Corkscrew. Pulling out a stopper with a corkscrew (without lever or other device) : it's more efficient to turn the corkscrew at the same time that we pull out.

Handy usages, various ideas about domestic needs.

-  Stop sticking the tape around your fingers (!!*\?#!!). Properly put it at the right place the first time instead to fight with it. The process consists in seizing the end of a tape by the under of the tape (glue side), close to the cutting teeth, by using a little tube (kind of telescopic aerial of radio set). The Scotch tape is stuck on the tube and while pulling up, one unrolls the length (not too long). Rub the ribbon against the teeth with the tube or an object of metal (scissors) to precut the tape (if the tape piece is short, one can use the tube itself temporarily by separating it of the tape which was unrolled (it is afterwards replaced where it was). You now have a piece of tape stuck on the tube and you can place it more easily see also daily physic.

- To sort, classify To sort its screws, bolts or why not seeds or buttons, and put them away back in their limp, use an old frying pan (handle removed), these plastic dish we put beneath a pot of flowers or to cut out a plastic bottle of milk (flexible and fatty), a carton of milk or drink"  (see photos). The pieces of the bottle of plastic or the carton makes it possible to sort out and make your choice. While folding them a bit, screws find easily their way to the suitable box. Dayly, I used a small plastic balloon cut into two parts; one can fold it easily to transfer his contents into a box.

- To wrap. Gathering small objects, protect, assemble things that go together ? Think at the kitchen shrinkable film.

- To pack . Seeking a good stiff cardboard to make a small package ? Think to the 3 to 5 litres box of a "bag in box" wine container. So if you use drinking wine, keep aside one or two box of them because they are the most rigid I know ! Otherwise, ask a friend or neighbor.
- Air bags. From the cardboard box wine above, also keep aside the plastic pouch which is inside; rinse it. It will make a cushion for your head to read lying on the sand, in the garden, or in bed. Or to the curve your back. These pockets are easier to inflate and deflate. A fabric envelop makes them anonymous. The more daring to think waterbed, filling half water, under the mattress. It does not need that much.These pockets are very strong and valves as well. I jumped on it without problem. It is very safe, especially metallic ones who have a double pocket.


- Pouch of water. To get water in the garage, kitchen craft, in a cabin or in any other place, the water pouch suspended is more convenient because you can run the water with one hand without having to unscrew a cap or grasp any can. The pouch is attached by two corners with a double turn of rope and tied very tight. If needed, we could even pass it around the neck.

- Fixing a buckle to a belt or strap, button and fabric torn for the waist of trousers: see epoxy glue in brico31b adhesives. Use the "search" of the browser).

- Climb up on a stepladder.Easy, but risky!  on a scale, firefighters recommend to wedge their feet against the uprights of a ladder (left foot against the left of course). Thus, the weight is well distributed to ensure a greater stability of the ladder), which reduces the risk of tipping sideways. We may add that the bar does not support the load in the middle (reduced risk of breakage).
The rocking side of a stepladder can occur when it is in near the wall or a closet. When leaning towards the wall or to the inside of the closet, our feet can push back it  ! Indeed, in this position, the stepladder has a poor stability because it is narrow. I suggest to it a little in skew, ie to put the back (side steps) away of the wall. Think to ensure also a good grip with one hand on the shelf.


- All that does not stand up. The decorative objects and other (statuettes, dolls, models, photo frames, ..). Paste them onto a CD, a /b> cut-out card board..  with a two faces adhesive or some "universal" glue. The CD can be painted or covered (cloth, paper fantasy). Another solution is the plastic in grains; see improve-restorate

All that slip, escape, skid. Use garden gloves coated with a non skid matter for handles of brush, brushes deck scrub, garden tools, screwdriver, hammers. Or roll up several quite tight turns of non-skid mat; fix with rubber bands, a cord or an adhesive tape; you will not contract yourselves any more and will tire much less.
- Non skid mat. It is traditionally used for the carpets or in the trunk of the car (under suitcases or between them) ; it can be used also under
objects (lamps, pots, alarm clocks, cushions, joystick) ; on a chair, on a table or the worktop to immobilize the salad spin-dryer. Allow to unscrew more easily a pot lide and rolled around a stick, give a good grasp.

Useful on a benchwork to immobilize what is posed onto (idea taken up by Wolfcraft to which I communicated it and that was presented in Cologne exhibition, then sold in the whole world. - Transparent non skid mat, (put on here on a green sheet.

- Balls on stick (brushes deck scrub, shovels, rakes. The ball improves much the catch in hands when it is necessary to push. Three ways : - Make a plastic ball with the plastic "repair all" (see, repairs, broken part). 
2 - Use, as I did, a round wooden decorationtip (for large curtains rod). You stick them well on the top of the handle by filling in with a bond paste (to be mixed). 3 make a hole in a tennis ball, smaller than the handle and stuck. It is very hard to cut out it, a strong chisel is needed (for nails of toes). On can only slit it  with a saw or a cutter.

- Screw with a "tightening ball" without any screwdriver. Mould in your hand a plastic ball, see, improve, restorate " and coats the head of the screw. Useful for what must be screwed and unscrewed easily. You can make a nut wing also, but it is less aesthetic (my point !).span >


 Three wire electrical plugs. Plugs with ground pin are sometimes difficult to take out from the outlet. You can add a no métallic loop rope that will pass between two pins. The only precaution is it doesn't have humidity (a dry rope is itself insulating). Simply pull off the loop of rope to unplug. Another solution, more technical, is to bore a hole into the plastic of the plug and pass the rope inside (you must know where to drill safely). What I did for one of them for long.
